Flying Embers Fermented Sciences started literally in a test kitchen on our CEO's vineyard in Ojai, California. At that point, it was just an idea, a beverage without a name. When the Thomas Fire came, we found meaning in the experience. You sometimes think that way after watching a fire come at you for many nights, and that's where the name Flying Embers was born.

"Already more than 270 square miles—that's bigger than Chicago—and intensifying tonight."

We had a small-scale, artisanal product, but we wanted to become a national and perhaps even global brand. How do you scale up from a kitchen concept to a large process? This is where we partnered with Technoblend and ProBrew. We needed to figure out how to scale up our production.

Seriously, I was here like a year ago, and we sat down and concocted this entire new kombucha brewery. Here I am one year later, and the thing is in full-fledged production. ProBrew and Technoblend are super proud of what they've accomplished here with Flying Embers, delivering some awesome technology into a 200-can-per-minute canning line that's putting product all over the country.

Building this plant from the ground up requires a lot of growth. ProBrew has always been there for us. Whenever we have new ideas, we can have a quick conference call, gather a few of their brightest minds, and work things out. We are on an Ewon connection, so they can patch in remotely and do any kind of servicing from Wisconsin while we're here. It's been a great partnership.

ProBrew has seen significant growth this year, with a team of over 50 people designing innovative products. The entire beverage industry has seen innovation like never before, and we are along for that ride. Cheers!
